Crispy Daikon and Potato Cakes

Crispy Daikon and Potato Cakes

“Robes of white cloth
should be aired out, they say,
just when summer arrives
and deutzia flowers in bloom
cause the hedge to droop.”

Ogata Kenzan, Translated by John T. Carpenter

Like latkes, with black sesame seeds and a touch of wasabi. Make sure your daikon is wrung dry. Sorry there’s no recipe–I started out with one, then fussed with it beyond recognition. My advice is to use a good latke recipe, substitute 1/2 the potatoes for daikon, and add a bit of spice if it suits you.
